Elderberry Gummies

1.     Take 100ml of your elderberry syrup and dilute it with 250ml of apple juice (you can dilute the apple juice further with water if you want to reduce the sugar).

2.     Add this to a small pot and sprinkle enough gelatin powder to cover a thick layer over the surface (about 2 -3 tablespoons). *see notes on gelatin below

3.     Allow to sit for 5 minutes to bloom.

4.     Warm on the stove gently and stir constantly with a whisk until the gelatin has fully dissolved. Should take about 5 mins. Please don’t let the liquid boil.

5.     Pour into your glass container and let it set in the fridge overnight.

Once set, you can run a knife through the jelly to create 20 little squares (this will have 5ml of syrup per square). Add a couple of squares to kids lunch boxes for a great immune and antiviral snack! It will last weeks in the fridge.

Gelatin has other great healing properties too. It’s full of protein which helps growing bodies, plus it helps strengthen gut health amongst many other healing functions. The protein component of gelatin is collagen – so parents, this is GREAT for youthful and firm skin, hair and nails, and also great for joint and bone health.

*NOTE: The more gelatin you add, the firmer the jelly will set. (You can buy tubs of grass fed Australian gelatin from health food shops, or contact me!) GelPro or Nutra Organics do great ones.

Cutting the above jelly into 20 pieces will give you 5ml of elderberry each serve.

The dose recommended for kids is 5ml of elderberry syrup 1-3 x day (1-3 squares).

Adults can take up to 15ml 1-3 x day, so enjoy 3 squares up to 3 times a day.

Double up this recipe as much as you like to save time.
